Save the reason a shop changed something

Operational changes need source trails, not only final values.

A price or menu change is not only a final state. The reason matters: supplier issue, margin, staff prep time, customer confusion, or seasonal demand. If the reason is saved as a source trail, the next review starts from memory instead of guessing.
